Sažetak
Olive pomace has a composition very similar to olive oil. Thus, it may exert biological effects comparable to those of olive oil (antioxidative, antinflammatory, etc.). However, in complex matrices, such as olive pomace extract (OPE), bioavailability is largely dictated by the release of active ingredients from matrix during the digestion process. Therefore, we simulated in vitro digestion of OPE encapsulated with several cyclodextrins and predicted intestinal permeability of hydroxytyrosol and tyrosol (main olive phenolic compounds).
