Sažetak
Honey aroma, one of the most typical features of honey, is very complex and involves many tens of volatiles compounds. One of the common honeys from Dalmation region of Croatia is Sage honey. Isolation of volatiles from two samples of Salvia officinalis L. unifloral honey using one methods ultrasonic solvent extraction (USE), followed by gas chromatography and mass spectrometry analyses (GC, GC-MS). The solvent used for USE was mixture of pentane and diethyl eter (1:2 v/v). Benzoic acid and phenylacetic acid where the major compounds of ultrasonic solvent extracts. The scavenging ability of the series of concentratios of the honey ultrasonic solvent extracts and the corresponding honey samples was tested by DPPH (1, 1-diphenyl-2-picrylhydrazyl) assay.
