Entomophagy is the concept of eating insects that has long been represented in human history. Tenebrio molitor is one most familiar edible species of insects whose larvae are massively consumed in Africa, Asia, America and Australia. Their rearing and consumption has recently been recorded in Europe as well. The quality of food to feed larvae is of crucial importance for their development, which includes the speed of development, survival success, fertility of adults and the quality of the flour obtained from their processing. The aim of the paper was to determine the influence of different types of food (wheat flour, corn flour, oatmeal and apple) on which larvae were grown and to establish the content of dry matter, protein, lipids, sugar and fiber in flour obtained from their processing. The results, calculated on the dry matter, show that the flour obtained by the processing of T. molitor larvae grown on wheat flour has the highest dry matter content (505 g/kg), ash (18 g/kg) and protein (284.8 g/kg). The larvae grown on corn flour had the highest content of raw fat (194 g/kg) and fibers (49 g/kg). The highest sugar content was recorded in larvae grown on oat flakes (12.8 g/kg) while the qualitative characteristics of the flour obtained from larvae that have been fed by apple are very low. The conducted research has shown differences in the qualitative composition of flour that relates upon the type of food. Depending on the purpose of T. mollitor rearing, it is possible to choose the type of food that result in the highest content of the target ingredient.
