Sažetak
Flavan-3-ols belong to the group of polyphenolic compounds which showed numerous potentially positive bioactivities. One of the polyphenol bioactivity which is not completely investigated is polyphenol interaction with food compounds such as lipids, proteins and dietary fibers. To obtain more information about these interaction, interactions can be studied through adsorption process to the equilibrium state at constant temperature. The aim of this work was to conduct the adsorption between procyanidin B1 and procyanidin B2 and β-glucan on different temperatures (25 °C, 37 °C, 45 °C, at pH 5.5) and different pH values (pH 1.5 and 10.0, at 37 °C). On the results of adsorption proces like ce which is the polyphenol concentration in the solution at equilibrium (mol/L) and the qe which is the amount of polyphenols adsorbed per g of β-glucan at equilibrium (mol/g), the non-linear and linear adsorption models like Freundlich, Langmuir, Dubinin-Radushkevich, Temkin and Hill were applied and the constant of these models were determined. Also, the thermodynamic parameters like Gibbs energy change ΔG, standard enthalpy change ΔH and standard entropy change ΔS were also determined. Kinetic models of pseudo-first and pseudo-second order were also determined. The results showed that adsorption of flavan-3-ols onto β-glucan was favorable, and higher for procyanidin B1. Also, adsorption was best described by pseudo-second order model.
