Sažetak
Istria is the Croatian peninsula within the Adriatic region that has a long olive growing and oil producing tradition. Olive oil from Istria has been recognized as a highly important product in the region, but its high nutritional quality has recently been recognized worldwide. Triacylglycerol compositions can be regarded as a fingerprint for diverse olive oils, and thus may be used as a tool for detection of adulteration and for the determination of authenticity. We performed MALDI-TOF analysis of olive oil triacylglycerol’s from different Croatian regions to assess triacylglycerol compositions and create profiles for discrimination of olive oils from different geographical origin, including olive oils from Istria. We tested this method on different non-olive vegetable oils as well. Preliminary results point to presented protocol as a promising procedure for assessment of olive oils authenticity that should be validated on larger number of samples.
