Sažetak
Carnosine and anserine are naturally occurring imidazole dipeptides found in the skeletal muscles and brain of mammals and birds. They exert multifunctional biological functions: anti-oxidation, anti-glycation, pH buffering and anti-aging. These remarkable substances have broad therapeutic area of applications in the treatment of autism, ulcers, diabetes and Alzheimer’s disease and an anti-proliferative effect on cancer cells. Imidazole dipeptides are usually determined by HPLC using various detection principles. Microchip electrophoresis (MCE) is a miniaturized mode of capillary electrophoresis (CE). In the presented investigation a new robust and miniaturized home-made MCE device was employed for quantification of two physiologically important imidazole dipeptides, using capacitively coupled contactless conductivity detection (C4D). C4D is a simple and universal electrochemical detection method which does not demand optical detectors nor derivatization of sample. The separation parameters were optimized to enable quantitative baseline separation of both dipeptides. The developed method was used to determine carnosine and anserine in chicken meat. The C4D detector responded linearly to both imidazole dipeptides in the range 0 – 20 mg L−1. Standard addition method was used to determine the accuracy and precision of the method. The obtained results are in a satisfactory agreement with a standard HPLC method.
