Sažetak
The ash content serves as a measure for determining the share of layer particles in flour which indicates degree of wheat utilization in milling. Ash content is used in many countries for flour typification. A standard method of determining the ash content is sample heating to a glow at 900 °C. This method requires a lot of time, work and energy. Since it is necessary, specially during wheat milling, to determine the ash content in the milling products, as fast and as cheap as possible, a different method for ash determination was suggested, i.e. electric conductivity measurement in flour extract. Forty-three flour samples of soft wheat with the ash content ranging from 0.400 to 2.00 % were tested. The ash content was determined for all samples applying both the standard and conductometric method. The obtained results showed high value of the linear correlation coefficient between the ash content determined by the standard method and by measuring electric conductivity of flour extract.
