Sažetak
Hydroxycinnamates (HCA), total phenols, glutathione and color properties were determined in Istrian Malvasia (Vitis vinifera L.) wines. Wines of vintages 2006-2013 (n=66) were sampled in 2014 across Slovenian and Croatian Istria. The average HCA content in examined wines was 102.8 mg/L (as trans-caftaric acid) whereas the average total phenols content was 159 mg/L (as (+)-catechin). Trans-caftaric acid was the most abundant HCA in all wines, following by its free form: caffeic acid and its glutathione derivative: glutathionyl caftaric acid. Content of glutathione in Istrian Malvasia wines was low (on the average 6.6, 2.2 and 1.3 mg/L in vintages 2011, 2012 and in 2013, respectively) whereas glutathione was not detected in older wines. In older wines the color shifted towards brown.
