Sažetak
Every industry, including also the food industry, has a goal of maximum utilization of raw materials during production with minimum waste, where the waste is not necessarily a "waste" but a by-product or raw material for a future processes. Today there is great interest in the use of by-products of the food industry in a variety of purposes. Researchers are working to develop new technologies and new uses for these by-products in order to reduce environmental costs of the food processing industry. New processes are developed to recover components producing value added products, such as novel functional food, or in the isolation of bioactive substances for further application in cosmetic and pharmaceutical industry. In recent years, according to the growing negative impact of human activities on the environment, there is a need for environmental protection, and therefore in the food, chemical and pharmaceutical industry the close attention is paid to green and sustainable technologies that are based on an acceptable compromise between the economic, social and environmental requirements. Supercritical CO2 as a new “green” solvent have been considered extensively in recent years and has proven to be highly desirable solvent in separation processes since it is non-toxic, non-flammable, odorless, tasteless, inexpensive and readily available in large quantities, and because it is an environmentally friendly and GRAS (generally recognized as safe)solvent. Supercritical fluid extraction is gaining increasing interest in last decades in terms of its possible commercial applications and also in the processing of by-products of all branches of industry. In this paper, the application of supercritical CO2 extraction in the isolation of active components from by- products of plant food processing is presented.
