Sažetak
Wine can be packed in various types of packaging materials, from glass and metallic materials, to plastic and multilayer materials. The best material is glass, although multilayer packaging also has good characteristics for quality preservation. The aim of this study was to analyze two types of red wine (Venus and Vranac) packaged in a multilayer packaging material (paper/Al foil/plastic foil), and to follow the quality of wine in a 12 months period. During that time, usual quality parameters were followed: free and total sulphur dioxide amount, sugar amount, total acids and alcohols. In addition to that, the amount of total polyphenolic compounds and total flavonoids were measured with the use of spectroscopic methods. The study showed that during that period both free and total SO2 amount decreased, the amount of total acids increased slightly, while sugars and alcohols remained stable. Total flavonoid and polyphenol amounts fluctuated during that period. Quality parameters showed that multilayer packaging can preserve the quality of wine since the sugar/acid ratio, alcohol content and flavonoid and polyphenol content remained almost the same. Various oxidation reactions probably affected the decrease in the free and total SO2. These reactions should be investigated in the future.
