Sažetak
Mycotoxins are low molecular weight secondary metabolites of toxigenic fungi that commonly contaminate animal feed and human foods. In sub-Saharan Africa (SSA) toxigenic fungi contaminate vulnerable staple foods such as maize, groundnuts and other cereals and nuts with resultant production of multiple fungal metabolites. Mycotoxins of particular concern from a human health perspective include the Aspergillus toxin called aflatoxins (AF), the Penicillium toxin referred to as ochratoxin A (OTA), and Fusarium toxins such as fumonisins (FB), trichothecenes (e.g. deoxynivalenol, DON) and zearalenone (ZEN). Assessment of human exposures to these toxins in SSA has mainly been through direction measurement of each toxin in foods and use of food frequency questionnaires. Recently, a new direction presenting the bigger picture of the exposure situation as well as likely links with health implications is the current order. This focuses on the combined multi-mycotoxin analysis in foods and analysis of some of their biomarkers in body fluid, typically urine. In Cameroon, preliminary mycotoxin reports have focused on occurrences, dietary exposures and bio- monitoring.
