Sažetak
Milk is considered to be the most complete food and the only source of food for the most mammals. With the increase of standard of living, milk consumption rises as well, however only to a certain level of market satiation. According to some market analyses, that satiation level in the Republic of Croatia is around 1 billion of liters. However, inherited poor production structure and the Homeland War had negative effects on significant increase in milk production. This production sector is currently in very bad position if considering possibilities for fast growth, which is a necessary precondition for this production to become competitive on international market. Measure that were needed in order to realize relevant changes within the milk production system did not have enough support by the Government. Croatia started accession negotiations with the European Union, which means that it needs to adjust its market to the European one. This is of high importance, as the European market will be a model to follow in all its aspects, not only in production and trade of milk products. In 2004, milk production in Croatia was around 686 millions of liters, 533 millions of which were being purchased. Purchase share was 77.7%. The rest of milk was used for the purpose of feeding calves, which is still traditional practice on small family farms in Croatia. In 2005, total number of cows in Croatia was approximately 231.000. These cows produced on average 3.000 liters of milk yearly. Such state in cattle and milk production can be explained by the fact that Croatian agricultural farms are still quite small in size. Over 90% are small family farms with up to 3 cows and 3 ha of arable land. The majority of these farms are not market oriented and do not have preconditions for further development and production increase. Family farms with 4-10 cows make one fourth of the total number of farms, and they own 53% of all milking cows in Croatia. However, financial benefit of these farms is often questionable, as they are not making expected profit. In 2003, Croatia had only 1436 producers of milk owning more than 11 cows. These producers were competitive on the market and had satisfactory financial and business results.
