Sažetak
Beer has been a popular drink for many years, which apart from moments of taste demonstrates a significant positive impact on the human organism offering protection from various diseases. The purpose of this work was to study whether complex formation caused by beer consumption affects the bioaccessibility of metals in the human body. Under this perspective, a physicochemical characterization of organic matter contained in beers, produced from Greek microbreweries, was carried out. The complexing capacity of copper ions, together with the total copper content of beers were determined, as well as the concentrations of surface active substances and catalytically active organic compounds.
