Sažetak
The aim of this trial was to determine mares' milk composition produced by mares of Lipizzaner breed. There is still a lack of knowledge regarding equine milk production and its composition. In most cases, published data based on milk samples taken from mares which were not included in the routinely milk production. Consequently, these samples were actually first jets of milk and could not represented the composition of the whole amount of milk from one milking. In this analysis three Lipizzaner mares in the age of seven years were included. All were foaled in April and were milked from mid-August to the end of September, three times per day. Mares were adopted on the routine machine milking before the milking trial period started. Milking yield (MY) were measured after the each milking on the test day (TD)once per week. Samples were taken after each milking on TD. The contents of fat (FC), protein (PC), and lactose (LC) as well as somatic cell count (SCC), total bacteria count (TBC)and freezing point (FP) were determined in 45 samples. In averafe mares produced 1, 030 g of MY per milking where 0.42% of FY, 1.50% of PC and 6.32% of LC, 12.51 of binary logarithmic SSC, 4.74 of decimal logarithmic TBC and -0.497 of FP where. The statistical model was used considering monitored effects. Days in milk had significant negative effect on the PC, LC AND TBC and significant positive effect on the MY. Successive milking had significant effect on the PC and LC. The higest PC and LC were estimated in the milk from second and the lowest from the third milking. The higest PC and LC were estimated in the milk from the second and the lowest from the third milking. The higest TBC were in the milk from the first milking. Such a trial was performed for the first time and resultscame from the routinely machine milking Lipizzan mares which are definitely suitable for milk production what could supports the preservation of this unique breed.
