Sažetak
The possibility of white-grained wheat protein content determination with Lowry method directly in sample is investigated. Method is adapted to the substratum and outfit which is used in laboratories for food analyses. Proposed procedure makes it possible to determine protein content in small weight of sample (cca 20 mg). Statistical analysis show that this simple, inexpensive, easily to perform photometric method can be used as a good substitution for Kjeldahl method.
