Sažetak
This paper sets a goal to establish a trend of nutrition quality in the female pupil´s home of Split. The testing was conducted in the period from 1998th to 2013th year . Chemical analysis of the total meal energy value, proteins, fats and carbohydrates was done. We calculated ratio of proteins , fats and carbohydrates in the total daily energy value . Additionally it was calculated a share of bread in total energy value of daily meals. Food used in daily meals are grouped into basic food groups . The frequency of use of certain food groups is compared according to the years covered by this study . Results were compared with the tested values of given food standards . For results descriptive statistic was used. In the 15 years period of following up nutrition quality in a female pupils home of Split it was established continuously lack of protein and carbohydrates which affected the energy value of daily meals . The share of bread in total daily energy value of meals was ranged from 30 to 40 % . Since 2005, the share of bread in total energy value started to decrease and that trend is retained . Improvements in the terms of meeting the standards for proteins and energy value are insufficient . It is necessary after the implementation of new seasonal menus to try for all parameters to be aligned with the new standards . It is also necessary to continue the annual analysis of nutrition quality in female pupil´s home of Split and cooperation with the Institute for Public Health of Split Dalmatian County to resolve present deficiencies more faster and more efficiently .
