Sažetak
In an effort to elucidate the properties and reactivity of the parent free sugars, herein we present the formation of leucine-enkephalin related imidazolidinones, as well as Amadori compounds from glucose, mannose or galactose and leucine-enkephalin. We will present the influence of solvent , temperature and added base on the rate of formation of these carbohydrate-peptide adducts.The structural properties of the isolated products deduced from NMR spectroscopy will be also discussed.
