Food processing employing ultrasound technology has been the object of research by food scientists in the last ten years. This technology has proved to be a promising technique in laboratory and industrial applications. It has several advantages in technical, economical and energy aspects. Ultrasound has been shown to serve as a technique that can be used in many traditional food processing operations and processes, and innovative applications and designs of equipment are available.
