Sažetak
Marasca cherry, except in the confectionery, food and liqueur industry has got increasingly importance in the pharmaceutical industry. Fresh or processed, Marasca cherry fruits are important ingredients for a proper and healthy human consumption. To determine the leaves mineral composition and the nutritional value of the Marasca cherry fruit, during 2012 the research was conducted in the area of Zadar (Vlačine - Maraska d.d.). Leaf samples were taken on the 2nd May (in the phase of formation of fruits) and 21st June, at harvest, when the fruit samples were taken as well. Compared with the optimum values (2.2-3.0 % N/ST and 1.5-2.5 % Ca/ST), determined nitrogen concentration were optimal to rich, and the calcium leaves supply were extremely rich (3.47-5.77 % Ca/ST). Total nitrogen concentrations in the Marasca cherry leaves were consistent with the determined chlorophyll content, and a positive correlation between chlorophyll content and nitrogen concentrations in leaves was determined. Unlike nitrogen and calcium, potassium leaves supply level was significantly lower and were ranged from the lower limit of the optimum value in the first sampling to poor supply in the second sampling (optimum 1.5-2.0 % K/ST). It was also found that the 100 g of fresh Marasca cherry fruit brings significantly higher amount of minerals and protein compared to other types of cherries and sweet cherry. This is particularly refers to potassium, where the amount of 100 g of fresh Marasca cherry fruit can cover about 9.5% of the recommended daily intake, sweet cherry 4%, and other types of cherries less than 3.0%. Values of polyphenols determined in this study correlated with antioxidant activity patterns as well as the values of anthocyanins. In samples with the highest antioxidant activity, the maximum value of polyphenols and anthocyanins were determined.
