Sažetak
Research on the influence of combined, continuated chilling on the bacteriological composition and water activity was carried out on young fattening broilers of Hybro line (Euribrid, B.V. Boxmeer, Holand). A total of 60 samples of skin over the M. ilio tibialis lateralis and 60 samples of skin over the mm. pectoralis superficialis cranialis et caudalis were analysed for presence of bacteria. The analysis were done either on hot and chilled carcasses.
