Sažetak
Skimmilk with modified protein content by using ultrafiltration is UHT-treated and fermented with yoghurt bacteria to get knowledge on the technological possibilities to make dairy products with a change protein content. The experiments were carried out on skimmilks with 2, 0-6, 0 and 4, 5% protein by mixing normal skimmilk and permeate, respectively retentate from ultrafiltrated skimmilk and whey. The experiments have shown, that it is possible to ferment skimmilk with a modified protein content by using the normal procedure. The viscosity of the fermented products will increase with an increased protein content.
