Sažetak
Fruit growth is followed by numerous biochemical changes which end with fruit full maturity. Development of the red color, which is manifested through the coloration of the fruit, is commonly used as a parameter for maturity determination and depends on the content and anthocyanins profile. The study was conducted on sweet cherry cultivar 'Gomilička', the most common cultivar grown in the Mediterranean part of Croatia. From the full bloom, during ripening until harvest fruit weight and fruit size were measured, while color measurements as L, a, b values using colorimeter and content of total anthocyanins by spectrophotometer were measured during fruit ripening. Sweet cherry fruit growth is intense in the first 21 days after full bloom, and the second fruit growth phase is significantly slower because of pit lignifications, it last 10 days. Thirty five days after full bloom fruit growth continue and fruit weight increased rapidly. Accumulation of anthocyanins starts 50 days after full bloom. Amount of anthocyanins recorded 50 days after full bloom was 225.78 mg/kg. Results show that that color measurements can be used for monitoring pigment evolution and anthocyanins contents of sweet cherries.
