Sažetak
It has been demonstrated that oxidative stress in fungal cell is a prerequisite for aflatoxin production by Aspergillus parasiticus (Jayashree and Subramanyam 2000). Plant seeds can respond to the Aspergillus infections by the activation of specific lipoxygenases which products can differently affect aflatoxin production (Burow et al., 2000). In fact 9S-HPODE (9S-hydroperoxy-10E, 12Z-octadecadienoic acid) stimulates aflatoxin production while 13S-hydroperoxy HPODE (13S-hydroperoxy-9Z, 11E-octadecadienoic acid) modulates it negatively (Burow et al., 1997). Some antioxidants, like butylated hydroxy toluene (BHT) and butylated hydroxy anisole (BHA), are able to control the toxin production by Aspergillus parasiticus (Fanelli et al., 1985, Nesci et al., 2003). Encouraging results in aflatoxin control were obtained by use of lyophilised culture filtrates of some edible medicinal mushrooms (Fanelli et al., 2000 ; Ricelli et al., 2003) that could represent less toxic and more environment friendly alternative. A possible mechanism of this control is discussed.
