Sažetak
Honey is a sweet food made by bees using nectar from flowers. Botanical and geographical determination of honey has been a challenge trough years. Physical and chemical properties of honey vary, depending on water content, mineral and electrolyte content, the type of flora used to produce it, enzyme composition, pH, temperature, the proportion of the specific sugars it contains etc. These properties are used to to identify origin using different analysis approaches, such as biochemical markers, microscopic pollen analysis, physical and chemical multiparameter analysis using chemical nose, thoung, etc. Recently, we proposed a new rapid method for honey diastase activity using direct potentiometric principles. Direct potentiometry represents not only the direct measurement of diastase activity but also an indirect response of the redox couples and specific electrolyte composition of honey matrix. Honey matrix composition is directly dictated by the geographical and botanical origin of honey. The aim of this work was an atemt to present a new approach for honey samples distinguishment varying in their botanical and geographical origin using the direct potentiometric redox electrode response data and statistical Cluster analysis. Ten honey types from Croatia were measured: mandarin, acacia marin, forest 1, forest 2, lavender, mountain lea, linden nik, thorn, floral 1 and floral 2. The preliminary results using the Cluster analysis showed three separate clusters at 400 linkage distance. The first cluster consists of three honey types mandarin, forest 1, forest 2, the second acacia marin, lavender, mountain lea, linden nik, thorn and the third floral 1 and floral 2 honey. The presented data showed a tendency in honey types grouping by origin, based on their similar matrix composition using the direct potentiometric redox electrode response data and statistical Cluster analysis. Further investigations had to be performed including larger number of honey types with different botanical and geographical origin.
