Sažetak
Sanitation can highly contribute to consumption of energy, chemicals and water, and significantly increase load of wastewater if it is not conducted in efficient manner. Crucial factors for efficient sanitation are selection of proper sanitation system and chemical compounds, but attention should be also paid to water consumption and methods of its preservation. The aim of this research was to examine presence of chemical residues after sanitation in effluents of two CIP systems – one used in milk production and other used in production of soft drinks and to determine whether any savings in water consumption can be achieved. In addition, samples of waste waters from above mentioned industries were taken immediately after sanitation process and analyzed for chemical residues to determine the extent of load that sanitation chemicals contribute to wastewater. Standard methods for analysis of water and waste water were used in analyses of both effluents and waste water samples. Effluent and waste water samples were taken on three different occasions from two food premises in Croatia and mean value was calculated. Physico-chemical parameters of CIP effluent of dairy industry unit didn’t significantly differ from quality parameters of input water, which is indicator of sufficiently conducted sanitation program and shows potential for usage of end rinse water in pre-rinsing. Physico-chemical parameters of dairy industry waste water immediately after sanitation were in tolerable range of Croatian legislation requirements for dairy waste water. COD values of CIP effluent in soft drink line was almost as twice as high as the values of input water, which is indicator of needed corrections in disinfection programme. The results of waste water analyses showed that sanitation program should be corrected to meet the requirements of Croatian legislation.
