Sažetak
The present study was conducted on 90 pig carcasses (44 gilts and 46 barrows) originating from two PIC terminal sire lines in order to analyze carcass and meat quality traits and evaluate their suitability for further processing into dry-cured products. At the slaughter line and in laboratory following carcass and meat quality traits were determined: carcass weight, fat and muscle thickness according to “TP” method, leanness, carcass lengths “a” and “b”, ham length and its circumference, pH45 and pH24 in ham and LD muscle, drip loss, CIE-Lab, cooking loss and WBSF. The data was analyzed using analyses of variance (ANOVA) to test influence of terminal sire line and gender, as well as their interaction on the carcass and meat quality traits examined. Results show that the carcass traits as backfat thickness, muscle thickness, lean meat percentage and carcass length –“a” were affected by gender with significant differences (p<0.01), while the carcass length – “b”, ham length and ham circumference were affected both by terminal sire line and gender (p<0.01). Meat quality was influenced by sire line only in pH24 measured in LD muscle and CIE-a (p<0.01) while the WBSF was influenced by gender (p<0.05).
