Proanthocyanidins are polymeric flavonoids compounds composed of flavan-3-ols subunits, localized in solid parts of the grapes. In grape seeds, proanthocyanidins represent the major part of total polyphenol extract, and they are essential to grapes and wines quality regarding to their biological and organoleptic properties. The aim of this study was to determine the differences in monomeric, oligomeric and polymeric flavan-3-ols composition of grapes seeds between two native Croatian Vitis vinifera spp. (cv. Plavac mali and Babić) and American Vitis spp. (Vitis cinerea, Vitis doaniana, Vitis candicans, Vitis champinii). Grape seed tannins were extracted using acetone-water (80:20) followed by methanol-water (60:40). Monomers and oligomers in grapes seeds tannins extracts were identified and quantified by HPLC-UV-Fluo/MS. Percentage of galloylation and mean degree of polymerization were quantified by phloroglucinolysis. Results obtained showed significant important differences in proanthocyanidins composition between Vitis spp..
