Sažetak
The contamination of cereals with mycotoxins, both pre and postharvest, is a serious worldwide problem. Different mycotoxins can be found on the same seed (aflatoxins, ochratoxin A, fusarium toxins). In this study the effect of food grade antioxidants, resveratrol and BHA (buthilated hydroxy anisole), on the synthesis of different mycotoxins was evaluated. Resveratrol in concentrations from 23 to 230 ppm showed good inhibiting effects (from 60 to 90%) on synthesis of ochratoxin A and fusarium toxins while was less efficient on aflatoxins production. The BHA inhibited biosynthesis of aflatoxins (up to 95%), ochratoxin A (up to 85%).
