Sažetak
The aim of this article was to process the aplication of halal standard in turkey slaughtering in an industrial facility, fully compliant with EU hygiene package. The facility were passing the halal certification of quality, certificated for the manufacture of halal turkey meat, by the halal accreditation centre. In this paper we have analyzed the documentation that is used in halal slaughtering process, described the technological process of slaughtering and have highlighted the critical control points based on halal standard BAS ISO 1049 registered at the Croatian Standards Institute. It was found that the use of halal standard in accordance with the application of self-control plan in the building on the principles of the HACCP system, and is done separately from the entire production process. Religious slaughtering of such type is not in accordance with current legislation, as applied in accordance with the regulations on protection of animals during the slaughtering process of cultivation, and in accordance with the hygiene package, or plan of self-control.
