Sažetak
Monoterpens are very important flavors in vine of muscat cultivars. These compounds are already present in grapes, and their amount, profile and proportion are responsabile for aromatic characteristics in grape and vine. They are present as free terpens (FT) and bond terpens (BD). In the literature also, FT existing as FVT (free volatile terpens) and BD existing as PVT (potentially volatile terpens or glycosidically bond terpens). Monoterpens are synthesized during berry maturation and their concentration in grapes depends on various factors such as cultivar, viticultural practices, region, climatic conditions and moment of harvest. This investigation has encompassed two native cultivars in Croatia, on two locations (Porec and Umag) of Istrian peninsula. Those were Rose Muscat (red) and Momian Muscat (white). Our initial hypothesis was that ambiental factors could impact the development of terpene compounds. Our aims were: a) investigated of terpene characteristics of Istrian native muscats, b) difference inside microlocation on the aroma development case of Rose muscat, c) difference between microlocation on the aroma development case of Momian muscat and d) comparison with terpene characteristics of other cultivars. The content of free- and bound-terpens was determined using the GAS chromatography method. For both cultivars was characteristic good aromatic properties, but with high level of citronellol, especially as free citronellol. The environment interaction has noted influence for both cultivars to development of terpenic compounds.
