Sažetak
Glucosinolates are secondary metabolites from plants of Cruciferae family (e.g., broccoli, cauliflower, cabage) and they are composed of a gluconic and agluconic portion (benzenic, aliphatic or indolic). These compounds can be easily hydrolyzed by an enzyme myrosinase activated after mechanical destruction of plant cells to produce a range of physiologically active agents-isothiocyanates, nitriles, thiocyanates and indole compounds. It is believed that hydrolytic products of glucosinolates are indole compounds that have significant inhibitory effect on some mutagenic compounds. The aim of our study was to investigate cytotoxic, mutagenic and potential antimutagenic effect of an extract from cauliflower that is rich in indole glucosinolates, and standard indole-3-carbinol on bacteria Salmonella typhimurium, strain TA98, with and without metabolic activation, in comparison with two different mutagens: 2-aminoanthracene and 4-nitroquinoline-1-oxide. Noncytotoxic doses have shown no mutagenic effect, but they caused an inhibition of growth of induced revertants.
