Sažetak
The quality control of the honey botanical origin is still an open question. In recent years, the honey authentication has been focused toward identifying volatile markers of plant origin. Honey volatiles results from nectar or honeydew composition, bees actiyity or from industrial processing. Isolated volatiles show strong variability according to the extraction procedure. Therefore two-way approach to the honey volatiles profiling using both headspace solid-phase microextraction (HS-SPME) and ultrasonic solvent axtraction (USE) followed by GC-MS is important to obtain complete profile of volatile and semi-volatile compounds. The results of HS-SPME and USE volatiles profiling of Mentha spp. honey, Salix spp. honey and different honeydews will be presented with emphasis to found potential botanical markers for quality control.
