Sažetak
Pullulane is a low-calory ingredient of diethetic food predominantly replacing starch content. When added to foods and beverages it improves good properties such as consistency, viscosity and dispersivity. Pullulane inhibits the moulds growth thus prolonging the shelf-lije time as well as the food quality. On the surface of food product it forms an elastic protective film which can replace thin plastic film (0.01 nn thickness) on food packaging material. The pullulane film has an advantage compared to the plastic film, i.e. contains no additives such as plasticisers or antioxidants. The corosion parameters of tin (icorr., Ecorr., ba, bc) were determined in model solutions using polarisation methods. For that purpose 0.3 per cent w/v NaCl solution with (50, 100, 200 and 500 ppm) and without ascorbic acid addition were prepared.In order to investigate possible inhibition effect, the concentration of 2x10^-4 g/L pullulane was added into prepared model solutions. The addition of pullulane into corrosive solutions decreased icorr. An inhibition coefficient of 80-85 per cent was achieved.
