Sažetak
Fruit juices in general are nutritious and popular drinks. Due to the increased awareness of healthy lifestyle nowadays there is an elevated interest in juices prepared from various fruits and berries used in the past. Cornelian cherry, Cornus mas L., is considered to be rich in sugar, anthocyanins, organic acids, tannins, phenols and antioxidants. Regarding the elemental composition only little is reported. As the chemical composition and the nutritional value of fruits depends not only on the cultivar, but also on other factors such as production area, soil and climate, agricultural practices, quality of the irrigation water, the storage and commercialization conditions it is important to determine the composition for each growing area. Thus the mineral content of cornelian cherries grown in central Croatia was investigated. Cornelian cherry juices were prepared in lab using metal free. Two different sample preparation methods were applied: the juices were only diluted with 2% HNO3 and also prepared by acidic microwave assisted digestion prior to quantification by inductively coupled plasma – optical emission spectrometry (ICP-OES). Both methods were optimized, validated and compared. For further studies the dilution step was chosen as sample preparation. High amounts were found for Ca (200 mg/L), K (1 g/L), and Mg (80 mg/L), followed by Na (10 mg/L), Zn (1.6 mg/L), Ni and Fe (both 1 mg/L). Ba, Cd, Cr, Cu, Mn, Pb, and Sr were found to be present in concentrations up to 0.4 - 0.8 mg/L.
