Sažetak
The studies of wine antioxidants have been focused on an electrochemical method based on the monitoring of the potential vs. current response at an inert electrode (preferably glassy carbon) immersed in a solution of diluted wine. Cyclic voltammetry measurements are quick, inexpensive, and allow the determination of the reducing strength of individual wine antioxidants (the more powerful reducing agent will have a less positive oxidation potential). We applied cyclic voltammetry at an inert electrode in the study of polyphenolic content of Croatian red and white wines and compared the results with those obtained using the conventional spectrophotometric Folin-Ciocalteu method.
