Sažetak
The quality of food products is a theme that deserves to be closely elaborated. Since HACCP system is considered to be one of the most efficient ways of building food quality management systems, its history, basics and application are presented in this paper. The most recent developments in food quality management systems, regarding the appearance of ISO 22000:2005 international standard, are also described together with results from survey conducted among Croatian food industry enterprises.
