Sažetak
Proteins, fats, cellulose, ashes, carbohydrates, nucleic acids and minerals were determined in soybean and its products tofu and tempeh commercially available by SOJA LABOS d.o.o. in Zagreb market. The energetic value and the energetic share of proteins, fats and carbohydrates were calculated. Results have shown that tofu and tempeh represent the food with - with high contents of proteins and fats, but relatively low contents of carbohydrates - with high contents of Ca, Mg and P and low concentration of heavy metals and nucleic acids - with low energetic value From the contents of proteins and fats in soybeans the yield of these components in tofu and tempeh was calculated.
