Sažetak
Basic economical strive of all production processes, regardless the economic sector, is to produce quality product at low cost in order to obtain profit. Logistics enables foresaid, due to the optimization of all flows that it complies – goods, people, information, energy, waste, capital and knowledge. Therefore, logistic principles are indispensable part of all human activities, economic or social. The logistic subsystem that is tertiary logistics is an “intelligent” whole that cannot and must not be avoided in the dynamic surroundings of global tourist market due to enabling products and services of every human activity to be valorized trough the everchanging market of tourism demand. Processes organized according to logistics principles ensure the quality of a tourism destination’s offer, with a sole objective that is consumer satisfaction. Success of tourism-related companies depends on their relationship with surroundings realized trough procurement and sales logistics. Procurement logistics will be the central issue of this paper because of its importance for the hospitality industry – hotels, more precisely. Optimum levels of goods, materials and other required inputs in providing the guest with the complex hotel product (and all the services in complies) are prerequisite of creating competitive advantages and mostly result in improved financial effects. Apart from the scientifically based theory of logistics in tourism, this paper shall define the logistic processes in tourism and illustrate the importance of logistic principle implementation in terms of concrete example of logistics process of procurement in hospitality industry. The objective is to identify types of logistic procurement flows and their frequency in connection to the type of hotel entity, tourism demand it needs to satisfy and the tourism region it is situated in. Also, it is inevitable to demonstrate the effect the logistic system has on the quality of hotel service and the guest satisfaction.
