Sažetak
The research was focused on determinations of shelf-life of tinplate cans, which were packed with tomato puree and essential onion oil. The all samples were stored at two different, constant temperature of 20 °C and 36 °C. The analyses were carried out at pre-arranged times using different analytical methods. The composition of head-space gas were performed with gas chromatography (GC). Tin and iron dissolutions in the products by atomic absorption spectrometry (AAS) and nitrates content by high performance liquid chromatography (HPLC). The result indicate two mechanicms of onion oil actions on iron and tin dissolutions. For iron obtained data, it was found that onion oil has great influence on corrosion accelerations processes, while results of tin dissolutions showed inhibiting and protective effect of can surface.
