Sažetak
The determination of trace elements in edible oils is important because of the metabolic role of metals, for adulteration detection and oil characterization. The most commonly used techniques for the determination of metals in oil samples are inductively coupled plasma atomic emission spectrometry (ICP-AES) and atomic absorption spectrometry (AAS. Among the different methods of sample preparation microwave digestion in a closed system is the most accurate procedure for a total recovery of the elements. A microwave decomposition of the edible oils in closed vessels was developed using a mixture of nitric acid a hydrogen peroxide  3 . This digestion method destroys the organic matrix of the samples of edible oil effectively. The procedure is simple, repeatable and relatively fast and no significant losses of the analytes are observed during the digestion step. The low achievable LODs enable the determination by ICP-AES of even very low concentrations of most elements of interest in samples of olive oils. The proposed ICP-AES method permits the determination of Ca, Fe, Mg, Na, and Zn in olive oils. By this method the results for olive oil were in μ g/g: 2.1, 15.2, 3.3, 33.9, 3.5 for Ca, Fe, Mg, Na, and Zn, respectively. Elements present in small amounts can be measured by GFAAS in the same sample digest. The concentrations of Al, Co, Cu, K, and Ni measured by GFAAS in olive oil were in the range 0.15 to 1.5 μ g/g.
