Sažetak
The effect of water activity (0.99, 0.95, 0.90) and temperature (25, 30 oC) on fungal growth and aflatoxin B1 (AFB1) and total aflatoxins (AFT) accumulation from interactions between Trichothecium roseum and Fusarium sp. nonproducing aflatoxins and chromatographically similar compounds, and Aspergillus flavus producing aflatoxins, incubated at the same time on sterilized maize grains were determined in vitro.Populations (CFUs) on T. roseum and Fusarium sp. were reduced to a greater or lesser extent by the presence of A. flavus under all conditions tested, while that the presence of T. roseum and Fusarium sp. had a minor inhibitory effect on fungal populations of A. flavus.AFB1 and AFT production by A. flavus was inhibited at 25 oC and enhanced at 30 oC in the presence of T. roseum.The level of AFB1 and AFT was not significantly modified in the presence of T. roseum and Fusarium sp. under the conditions tested.
