Sažetak
Phenol compounds are very diverse group of biologically active substances. They are acting as antioxidants and consumption of plants containing phenolics is associated with reduced risk of chronic diseases. Plants may contain from simple phenolic compounds like phenolic acids till highly polymerized compounds like tannins. Corn grains are very important source of phenolic acid. In corn grains they can be in free form and in insoluble form where they are bound to various cell wall components. Aim of this research was to determine phenolic content in grains of 31 Croatian corn hybrids. Phenolics were extracted with 50 % methanol in water with and without acid hydrolysis to determine percent of free and bound phenolics. Content of phenolics in both fractions was determined using the Folin-Ciocalteu reagent with gallic acid as standard. Phenolic content in bound fraction was five-fold higher than phenolic content in free fraction. Free phenolic content ranged 75, 82 – 120, 60 mg of gallic acid equivalents/100 g corn grains and most of hybrids had around 98 mg/100 g. Bounded phenolic content ranged 469, 60 – 605, 74 mg of gallic acid equivalents/100 g corn grains and most of hybrids had around 545, 90 mg/100 g.
