Sažetak
In this research dried organic apple discs variety ” Gold Rush” were used. Sample drying was performed in laboratory tray drier at different temperatures (50, 60 and 70 °C) and at airflow velocity of 1.5 ms– 1. Different chemical pretreatments were applied on apple discs before drying (dipping in 0.5% ascorbic acid solution ; 0.3% L– cysteine solution ; 0.1% 4– hexyl resorcinol solution, 1% sodium metabisulfite solution and mixture solution of 0.5% ascorbic acid ; and 0.1% sodium metabisulfite). Dried samples were captured by digital camera and color changes were determined by image analysis in RGB color model. Image preprocessing and analysis were performed using Adobe Photoshop and Data Translation GLI/2 applications. All captured images were cropped on the same size (400×400 pixels). Analysis was done on four samples in every category (360 images in total). Results were showed that all parameters related to shape deformation (area, perimeter, Feret’ s diameter and circularity) and color changes decreased for drying time increasing. The smallest changes were determined after drying at 50 °C and pretreatment with ascorbic acid or with mixture of ascorbic acid and sodium metabisulfite solution. Image analysis method was successfully used for shape deformation and color changes determination on dried organic apple discs.
