Sažetak
Objectives:The purpose was to analyse the results of examination of hygienic status of catering establishment in County Primorsko-Goranska.Materials and methods: For analyses the total of 19453 smears from working environment in cook-rooms, from working surfaces, apparates,cutleries and from hands of working persons in direct contact with food, were taken in the period from 1986 to 1997 year.Results: Among taken smears, 17099 or 87.9% were correct. In 2159 or 91,7% of incorrect smears the total number of bacteria were elevated. As the reason of incorrectness followed coliform bacteria (139 or 5.9% of incorrect smears) and enterococca (56 or 2.4% of incorrect smears). Conclusion: The results point at a good hygienic status in the catering establishment of mentioned region. It is especially true as the most of investigating period was havy war period in this region.
