Sažetak
Structured lipids (SL) were synthesized by lipase-catalyzed transesterification of caprylic acid and olive oil in nonaquous medium in gram guantities and characterized. Caprylic acid was mixed with n-1-rich unsaturated acid in a 1:3, 7 molar ratio and transesterified by incubating at 50oC in n-hexane with Lipozym, immobilized lipase in a batch stirrer-tank reactor for 24 hrs. The products were analyzed by high performance liquid chromatography (HPLC) with UV detector. The acidity, peroxide value and conjugate diene and triene contents were determined.
