Sažetak
Tomatoes and mangoes, rich in lycopene and beta carotene, are believed to provide a variety of benefits to human health, hence the need for their quantification. High pressure liquid chromatography (HPLC) and spectrophotometry (SP), the two most widely used analytical methods at present, are relatively slow and costly as they require extraction of pigments prior to the actual analysis. In this paper Xe-lamp based photoacoustic spectroscopy (PAS) was applied for direct (without any need for pretreatment of the sample) and accurate assessment of beta carotene in spiked mango homogenates and lycopene in a variety of commercial products derived from thermally processed tomatoes. The concentrations of beta carotene and of lycopene in these commodities were determined by independent HPLC and/or SP measurements. High correlation between PAS data and HPLC/SP results was found for both products. Performance of PAS was also compared to that of tristimulus colorimetry. In the case of spiked mango homogenates, the correlation between each of the three colorimetric indices and the concentration of beta carotene is quite high unlike that observed for tomato products.
