Sažetak
Origin of raw materials has been controlled in processing and international trade of molasses, raw and white sugars. The causes are determined by food safety from „ field to table“ , as well as by economic reasons. Are sugars or molasses imported from Cuba, Brazil or Ukraine? Was the molasses processed from beet or cane, was cane raw sugar added to beet molasses, was white sugar processed from beet or cane ? Specific compounds in beet molasses and beet sugar are betain and raffinose. In beet molasses has been detected up to 6 % of betain, and up to 2 % of trisaccharide raffinose. In cane molasses and cane sugar betain could be found only in traces, and no raffinose. Cane molasses and cane sugar are characterized by trisaccharide theanderose. In cane molasses up to 2, 5 % of thanderose could be found. There is no theanderose in beet molasses and beet sugar or any beet sugar product. By determination of betain, raffinose, and theanderose, can be concluded on raw material in sugar processing or, if during sugar processing, raw material of another origin was addded (molasses, juice, syrup or sugar). Finding of trisaccharide theanderose in beet molasses or beet sugar is the proof that a cane product (molasses, syrup or raw sugar) was added to beet molasses or beet sugar.
