Sažetak
The Croatian tourism offering, together with the tourism offering of Istria, is seeking to position itself as best as possible on the increasingly competitive global marketplace and to differentiate itself from global rivals. One of the opportunities to differentiate our tourism offerings in terms of quality is reflected in the offering of genetically non-modified and ecologically produced food. This can be achieved firstly through various selective forms of the tourism offering, such as health tourism, congress tourism, nautical tourism, eno-gastro tourism, and then through the broader tourism offering. The authors base this paper on the hypothesis that today’ s tourists are environmentally aware, pay great attention to their health and are motivated to travel because of their health, among other reasons ; hence, the tourism offering together with the ecologically-produced food segment could play a vital role in promoting and repositioning Croatian and Istrian tourism. This provides the opportunity of gaining a competitive advantage for our offering on the competitive world market. The authors have confirmed this hypothesis in a tourist survey conducted during the 2007 tourism season in Istria. About 1, 500 domestic and foreign tourists were surveyed, and the majority of questions referred to the possibility of spending their holidays in a rural surrounding, to assessing the offering of ecologically produced food in restaurants and shops and to their willingness to pay more for this type of food. The results obtained can be useful in establishing production and in introducing the offering of ecologically produced food in restaurants and shops In cooperation with scientists from Slovenia (Turistica Portorož), the same survey was conducted in Portorož and Piran for the purpose of comparing the results obtained and using them in further scientific projects and in practise. A total of 538 foreign tourists were surveyed in the coastal part of Slovenian Istria in October 2007.
