Sažetak
Nowadays the basic of the most frequently applied computer vision systems for determining the porosity of bread crumb is the segmentation of digital photos made by vision system. During this procedure the classification of pixels is occurred by defined grey level threshold. The disadvantage of this method is the reliability of results considerably depends on several external conditions, for example the illumination. The objective of the work was to develop suitable optical method with digital image processing for determining porosity of bread crumb, which process is rapid, objective, reliable and independent from threshold. Furthermore the aim was to determine relationship between conventional Hungarian Standard (MSz 6333) and the optical method. Moreover the task was to establish applicability of the method for determining the changes in the porosity of bread crumb during the storage.
