Sažetak
Authors in this dissertation start from the hypothesis that among 200.000 of tourists that spend their vacation in Istria, the majority prefers healthy nutrition. This has been proven by research that interviewed tourists who vacated in Istria this summer seasons. From those interviewed it was inquired to answer questions that ranged from their preference for spending their vacation in the country side, how do they grade the offerings of ecologically produced food in local restaurants and shopping markets, to their desire to part a bigger portion of their budget to enjoy such an offer. The research furthermore, found that this would be one of the venues to differentiate the variety of touristic services and that through selective types of touristic supply such as: rural tourism, health tourism, congressional tourism, sport-related tourism, nautical tourism or gastro-tourism.
